Honestly I have never met a Prosecco that I truly didn’t love. Some, of course, more than
others, but generally speaking, they are pretty much all very well made. Hopefully this will remain the case, but as interest and popularity brings rise to an increased demand, we shall see what may happen. If you are looking for some holiday bubbles please explore the Italian section of you local wine merchant and search out a true Prosecco. Unlike Champagne, Prosecco is fermented in stainless steel tanks using the “Charmat” method. This process may sacrifice some of the complexities that a bottle conditioned Champagne may exhibit but in my opinion enables these master Italian winemakers to produce it in quantities that are very easy on the wallet.
VALDO PROSECCO Cuvée di Boj Brut DOC
What I like about this particular Prosecco is that it is a true Italian Prosecco, enjoyed by Italians everyday in Italy. They drink it locally. Quite often wines are “co-opted”, produced and shipped to the United States without every being distributed locally. I was lucky enough to be given a bottle of the Valdo “10”, which is not even available in the U.S. This wine drinks very clean and crisp, with a sound, elegant structure. A great everyday sparkler that is perfect for the holiday table. At around $15.00 I would compare this with a NV Champagne twice the price! And now a few words from the winemaker:

Cuvee di Boj is created from a selection of special Doc Prosecco grapes from the “vaile dei buoi”, a small area of S. Pietro di Barbozza, a leading and excellent viticultural area in Valdobbiadene. The vineyard is 600 to 1,200 feet above sea level with a southerly exposure. The soil is made up of clay and calcareous.
WINEMAKER’S NOTES
Fine and persistent perlage, the color is straw yellow with bright gold reflections. The bouquet is typically floral with a strong pear and Golden apple fruity aroma. The palate is refined, harmonious with a lingering aroma and pleasant, savory finish.
